I am so happy to report that the staff and I are working diligently to make this
the most fabulous
UnderGround Dining Event that we have created thus far. As you may know if you have attended one of my RV UG Dining Events before, I create a one of a kind one night only menu. As an artists this creates such a fun challenge for me to venture out into the farmers markets and cheese shops and other fine purveyors and find inspiration that is transformed into a delicious menu. It is also a Chef's Choice and a Surprise! So I bet you are asking, Chef Iccha, If I do not know what we are eating how will I know what wine to bring? I would say to you excellent question. Here is your answer:
If you know the flavor elements that are in each dish, you will be able to pick a delicious match. Wine pairing is a masterful dance of the right combination of taste and texture, aroma and intensity, acidic and fruity notes blending to create a sensation in the mouth that causes the sum of the parts to taste better than they did on their own. This is done by either matching or contrasting the elements of the dish to the wine. Since I know the textures and tastes, I will list the characteristics that will assist you in making a tasty decision. After you have perused the recommendations keep in mind that there are no absolutes pick a wine that you enjoy and you can never go wrong. You are the final authority!
